- 2 tablespoons Butter
- 1 tablespoon Olive Oil
- 16 ounces Cremini Mushrooms, sliced
- 4 cloves Garlic, minced
- 1 large Shallot, finely diced
- 1 teaspoon dried Thyme or 1 tablespoon fresh
- 1 cup Vegetable Broth
- ¾ cup Heavy Cream
- ½ cup Parmesan Cheese, grated
- Salt and Pepper, to taste
- 12 ounces Pasta of Choice
- Fresh Parsley, for garnish
Instructions
- Heat a large skillet over medium heat and boil water for pasta in a separate pot.
- Add butter and olive oil to the skillet. Once melted, add sliced mushrooms and sauté for 8–10 minutes until browned.
- Stir in shallots, garlic, and thyme. Cook for 2 minutes until fragrant.
- Pour in vegetable broth and simmer for 3–4 minutes. Add cream and simmer for another 5–7 minutes.
- Season with salt and pepper, then stir in Parmesan until melted and smooth.
- Add cooked pasta to the sauce and toss to coat. Add a splash of pasta water if needed.
- Serve garnished with fresh parsley and extra Parmesan if desired.
