Instructions
- Make sure your sweet potato is cooked and cooled completely before starting.
- In a bowl, combine mashed sweet potato, cocoa powder, maple syrup, nut butter, vanilla, and salt.
- Mix until a thick, sticky dough forms.
- Chill the dough for 15–20 minutes in the fridge to firm it up.
- Scoop and roll into 1-inch balls using damp hands.
- Roll each truffle in desired coatings like cocoa powder, coconut, or nuts.
- Place on a parchment-lined tray and chill for another 10–15 minutes.
- Serve chilled or at room temperature for a softer bite.
