Instructions
- In a food processor, combine mashed sweet potato, cocoa powder, oats, maple syrup, vanilla extract, and sea salt. Blend until smooth.
- Chill the mixture in the refrigerator for 15–20 minutes to firm up.
- Scoop out tablespoon-sized portions and roll into balls using your hands.
- Roll the truffles in your choice of coating (cocoa powder, nuts, or coconut).
- Place on a parchment-lined tray and refrigerate for at least 30 minutes.
- Serve chilled or let them sit at room temperature for a few minutes before enjoying.
