Ingredients

  • 3 cups sweet potatoes, peeled and diced
  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika

Instructions

  1. Heat a large pot over medium heat and drizzle in olive oil.
  2. Sauté onion, carrots, and celery for 5–7 minutes until softened. Add garlic, thyme, salt, pepper, and smoked paprika. Cook for another 1–2 minutes.
  3. Add sweet potatoes and vegetable broth. Stir well and bring to a boil.
  4. Reduce heat to low and simmer for 20 minutes, or until sweet potatoes are fork-tender.
  5. Use a blender or immersion blender to puree half the chowder, leaving some chunks for texture.
  6. Stir in milk and cream. Heat for another 5 minutes, then remove from heat and let sit for 10 minutes.
  7. Ladle into bowls, garnish, and serve warm with crusty bread.
