Ingredients
Scale
- 1 ½ pounds fresh strawberries, hulled and sliced
- ½ cup granulated sugar
- 1 tablespoon lemon juice
- 8 ounces mascarpone cheese
- 1 cup heavy whipping cream
- ¼ cup powdered sugar
- 1 teaspoon vanilla extract
- 24 ladyfinger cookies
- Fresh mint leaves (optional, for garnish)
Instructions
- In a bowl, mix sliced strawberries with granulated sugar and lemon juice. Let sit for 20–30 minutes until juicy.
- In another bowl, beat mascarpone, powdered sugar, and vanilla until smooth.
- In a separate bowl, whip heavy cream until soft peaks form. Gently fold into the mascarpone mixture.
- Briefly dip ladyfingers into the strawberry juice and layer them in an 8×8 or 9×9 dish.
- Spread a layer of mascarpone cream over the ladyfingers, followed by a layer of strawberries. Repeat until the dish is full, ending with a layer of cream and sliced strawberries on top.
- Cover and refrigerate for at least 6 hours or overnight.
- Dust with powdered sugar and garnish with mint leaves before serving.
Notes
- Chill your mixing bowl and whisk for better whipped cream results.
- Don’t over-soak the ladyfingers or they’ll become mushy.
- Use ripe, flavorful strawberries for best taste.
- Make ahead for easier serving and better flavor development.
