Description

Ingredients

  • 2 cups strawberries, hulled and sliced
  • ½ cup feta cheese, crumbled
  • ¼ cup red onion, thinly sliced
  • ⅓ cup sliced almonds, toasted
  • 3 tablespoons balsamic vinegar
  • ¼ cup olive oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Toast the sliced almonds in a dry pan over medium heat for 3–4 minutes until golden and fragrant. Set aside to cool.
  2. In a small mixing bowl, whisk together the balsamic vinegar, olive oil, honey, Dijon mustard, salt, and pepper until well combined.
  3. In a large salad bowl, layer the baby spinach, strawberries, red onion, feta cheese, and toasted almonds.
  4. Drizzle the dressing evenly over the salad just before serving.
  5. Gently toss to combine and coat everything lightly with the vinaigrette.
  6. Serve immediately and enjoy fresh.
