- 6 cups fresh baby spinach
- 2 cups strawberries, hulled and sliced
- ½ cup feta cheese, crumbled
- ¼ cup red onion, thinly sliced
- ⅓ cup sliced almonds, toasted
- 3 tablespoons balsamic vinegar
- ¼ cup olive oil
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
Instructions
- Toast the sliced almonds in a dry pan over medium heat for 3–4 minutes until golden and fragrant. Set aside to cool.
- In a small mixing bowl, whisk together the balsamic vinegar, olive oil, honey, Dijon mustard, salt, and pepper until well combined.
- In a large salad bowl, layer the baby spinach, strawberries, red onion, feta cheese, and toasted almonds.
- Drizzle the dressing evenly over the salad just before serving.
- Gently toss to combine and coat everything lightly with the vinaigrette.
- Serve immediately and enjoy fresh.
