Description
Soft, buttery cookies filled with sweet strawberry jam, finished with a simple powdered sugar glaze and colorful sprinkles for a playful pop-tart-inspired treat.
Ingredients
Scale
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup strawberry jam
- 1 1/2 cups powdered sugar
- 2–3 tablespoons milk
- 2 tablespoons sprinkles
Instructions
- Preheat Your Equipment: Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- Combine Ingredients: In a large bowl, cream together 1 cup softened unsalted butter and 1 cup granulated sugar until light and fluffy. Beat in 1 large egg and 1 teaspoon vanilla extract. In a separate bowl, whisk together 2 1/2 cups all-purpose flour, 1 teaspoon baking powder, and 1/2 teaspoon salt. Gradually mix the dry ingredients into the wet until combined.
- Prepare Your Cooking Vessel: Use a cookie scoop or tablespoon to portion dough into even balls and place them on the prepared baking sheets, spacing about 2 inches apart.
- Assemble the Dish: Gently press an indentation into the center of each dough ball using your thumb or the back of a teaspoon. Spoon about 1/2 teaspoon strawberry jam into each indentation, being careful not to overfill.
- Cook to Perfection: Bake the cookies in the preheated oven for 10 to 12 minutes, or until the edges are lightly golden and the centers are set. Remove from the oven and transfer to a cooling rack to cool completely.
- Finishing Touches: Whisk together 1 1/2 cups powdered sugar and 2 to 3 tablespoons milk until smooth to create a glaze. Drizzle or spoon the glaze over cooled cookies and immediately sprinkle with 2 tablespoons sprinkles. Allow the glaze to set.
- Serve and Enjoy: Arrange cookies on a platter and serve with milk, coffee, or ice cream. Enjoy warm or at room temperature.
Notes
- Chill the dough for 20 minutes if it feels sticky, this makes shaping easier.
- Use high-quality jam for the best flavor and vibrant color.
- Do not overfill with jam to prevent leaking during baking.
- Freeze unglazed cookies for up to 2 months, glaze after thawing for best results.
