- 1 1/2 cups graham cracker crumbs
- 6 tablespoons unsalted butter, melted
- 16 ounces cream cheese, softened
- 3/4 cup granulated sugar
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
- 1 1/2 cups fresh strawberries, chopped
- 1/4 cup strawberry jam
Instructions
- Preheat oven to 325°F (160°C) and line an 8×8-inch baking pan with parchment paper.
- Mix graham cracker crumbs with melted butter and press into the bottom of the pan. Bake for 8–10 minutes, then cool.
- In a large bowl, beat cream cheese and sugar until smooth. Add lemon zest, lemon juice, vanilla, and cornstarch, mixing until combined. Beat in eggs one at a time.
- Pour the cheesecake mixture over the cooled crust and spread evenly.
- Bake for 25–30 minutes until the edges are set and the center slightly jiggles. Cool completely, then chill for at least 4 hours.
- Spread strawberry jam over the chilled cheesecake and top with chopped strawberries.
- Slice into bars, serve chilled, and enjoy.
