  • 1 1/2 cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1 1/2 cups fresh strawberries, chopped
  • 1/4 cup strawberry jam

Instructions

  1. Preheat oven to 325°F (160°C) and line an 8×8-inch baking pan with parchment paper.
  2. Mix graham cracker crumbs with melted butter and press into the bottom of the pan. Bake for 8–10 minutes, then cool.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add lemon zest, lemon juice, vanilla, and cornstarch, mixing until combined. Beat in eggs one at a time.
  4. Pour the cheesecake mixture over the cooled crust and spread evenly.
  5. Bake for 25–30 minutes until the edges are set and the center slightly jiggles. Cool completely, then chill for at least 4 hours.
  6. Spread strawberry jam over the chilled cheesecake and top with chopped strawberries.
  7. Slice into bars, serve chilled, and enjoy.
