Ingredients

  • 1 and 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • A pinch of salt
  • 3/4 cup granulated sugar
  • 1 cup Greek yogurt
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups chopped fresh strawberries
  • 1/2 cup almond flour
  • 1/3 cup slivered almonds

Instructions

  1. Preheat the oven to 350 F.
  2. Whisk all purpose flour, almond flour, baking powder, and salt in a bowl.
  3. Mix sugar, yogurt, eggs, oil, and vanilla in another bowl until smooth.
  4. Fold the dry ingredients into the wet mixture until just combined.
  5. Gently fold in the chopped strawberries.
  6. Grease an 8 inch cake pan and line the bottom with parchment paper.
  7. Pour the batter into the pan and sprinkle slivered almonds on top.
  8. Bake for 35 to 40 minutes or until a toothpick comes out clean.
  9. Allow the cake to cool before slicing.
