Chewy strawberries ‘n’ cream granola bars made with hearty oats, sweet dried strawberries, and creamy almond butter, finished with a light white chocolate drizzle. These no bake bars are perfect for breakfast, snack time, or meal prep.

- 2 1/2 cups old fashioned rolled oats
- 1 cup dried strawberries, chopped
- 1/2 cup honey
- 1/2 cup creamy almond butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup white chocolate chips
Instructions
- Line an 8×8 inch baking pan with parchment paper and set aside.
- In a large mixing bowl, combine the rolled oats, chopped dried strawberries, and salt.
- In a small saucepan over low heat, warm the honey and almond butter until smooth and fully combined.
- Remove from heat and stir in the vanilla extract.
- Pour the warm mixture over the dry ingredients and stir until everything is evenly coated.
- Transfer the mixture to the prepared pan and press firmly into an even layer using a spatula.
- Melt the white chocolate chips and drizzle evenly over the top.
- Refrigerate for at least 1 hour until firm.
- Lift from the pan using the parchment paper and slice into bars before serving.
Notes
- Press the mixture firmly into the pan to prevent crumbly bars.
- Allow the bars to chill completely before slicing for clean edges.
- Store in an airtight container in the refrigerator for best texture.
