- 2 cups fresh spinach, packed
- 2 1/2 cups all purpose flour
- 1/4 cup warm water
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon baking powder
Instructions
- Blend the fresh spinach with warm water until completely smooth.
- In a large mixing bowl, combine the all purpose flour, salt, and baking powder.
- Add the spinach mixture and olive oil to the dry ingredients and mix until a soft dough forms.
- Knead the dough for about 3 to 4 minutes until smooth, then cover and let it rest for 20 minutes.
- Divide the dough into 8 equal balls.
- Roll each ball into a thin circle about 6 to 7 inches wide.
- Heat a dry skillet over medium heat.
- Cook each tortilla for about 1 minute until bubbles form, flip, and cook for another 30 to 45 seconds until light brown spots appear.
- Transfer to a plate and cover with a clean towel to keep warm. Repeat with remaining dough.
Notes
- Do not overcook to keep tortillas soft and pliable.
- If the dough feels sticky, add flour one tablespoon at a time.
- If the dough feels dry, add water one teaspoon at a time.
- Store in an airtight container in the refrigerator for up to 4 days or freeze with parchment between layers.
