- 3 large eggs
- 2 tablespoons cream cheese (softened)
- 1/2 cup shredded cheddar cheese
- 4 slices of bread (sourdough or multigrain)
- 1 tablespoon butter
- 1 small jalapeño, finely chopped
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Preheat a nonstick skillet over medium heat.
- Beat eggs with salt, black pepper, and red pepper flakes until smooth.
- Melt butter in the skillet, then pour in eggs. Stir gently until just set but still soft.
- Toast bread slices lightly. Spread cream cheese on one side of each slice.
- Layer eggs, shredded cheddar, and jalapeños onto bread. Close with another slice.
- Return sandwich to skillet, cooking 1–2 minutes per side until cheese melts.
- Slice and serve warm.
Notes
- Use fresh grated cheddar for the best melt and flavor.
- Adjust spice by adding more or less jalapeños and chili flakes.
- For added freshness, sprinkle herbs like chives or cilantro before serving.
