Description

Instructions

  1. Preheat: Preheat the oven to 400°F (200°C). Lightly grease or butter a mini muffin pan.
  2. Mix dry ingredients: In a bowl whisk together 1 cup cornmeal, 1 cup all-purpose flour, 1 tablespoon baking powder, 2 tablespoons sugar, and 1/2 teaspoon salt.
  3. Mix wet ingredients: In another bowl whisk together 1 cup whole milk, 2 large eggs, 1/2 cup melted unsalted butter, and 1/3 cup honey.
  4. Combine: Gently fold the wet ingredients into the dry ingredients until just combined, taking care not to overmix.
  5. Fill pans: Spoon the batter into the prepared mini muffin cups, filling each about three-quarters full.
  6. Bake: Bake at 400°F (200°C) for 12 to 15 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
  7. Glaze: While the poppers are still warm, brush each one with the honey butter glaze made from 2 tablespoons melted butter and 1 tablespoon honey.
