- 1 lb smoked sausage, sliced into 1/4-inch rounds
- 4 large potatoes, thinly sliced
- 1 small onion, finely chopped
- 2 cups shredded cheddar cheese
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup milk
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and black pepper, to taste
Instructions
- Grease the inside of a crock pot with cooking spray or butter.
- Layer half of the sliced potatoes in the bottom of the crock pot.
- Top with half of the chopped onions and half of the smoked sausage slices.
- Sprinkle with half of the shredded cheddar cheese.
- Repeat layers with remaining potatoes, onions, sausage, and cheese.
- In a bowl, whisk together the cream of mushroom soup, milk, minced garlic, dried thyme, salt, and pepper.
- Pour the soup mixture evenly over the layered ingredients in the crock pot.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until potatoes are tender and the cheese is melted and bubbly.
- Give it a gentle stir before serving to mix the layers slightly.
Notes
- Use Yukon Gold or Russet potatoes for best texture.
- For a richer flavor, add a splash of heavy cream or sprinkle extra cheese before serving.
- You can add chopped fresh herbs like parsley or chives for garnish.
