Ingredients

  • 5 to 6 pounds turkey breast, bone-in, skin-on
  • 3 large carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 1 large yellow onion, sliced
  • 4 garlic cloves, smashed
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 1½ teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon paprika

Instructions

  1. In a small bowl, mix olive oil, salt, pepper, thyme, rosemary, and paprika into a paste.
  2. Layer chopped carrots, celery, onion, and garlic in the bottom of your slow cooker. Pour in the chicken broth.
  3. Pat turkey breast dry and rub the seasoning paste all over the skin.
  4. Place the turkey breast on top of the vegetables, skin side up.
  5. Cover and cook on low for 6 to 7 hours, until internal temperature reaches 165°F.
  6. Optional: Broil turkey for 5 minutes to crisp the skin.
  7. Let rest for 10 to 15 minutes before slicing. Serve with the cooked vegetables and juices.

  • Use fresh herbs if desired, tripling the quantity of dried.
  • Add lemon or orange slices for a citrus twist.
  • To thicken the cooking juices into a gravy, use a cornstarch slurry on the stovetop.
