- 5 to 6 pounds turkey breast, bone-in, skin-on
- 3 large carrots, peeled and chopped
- 3 celery stalks, chopped
- 1 large yellow onion, sliced
- 4 garlic cloves, smashed
- 1 cup chicken broth
- 2 tablespoons olive oil
- 1½ teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- ½ teaspoon paprika
Instructions
- In a small bowl, mix olive oil, salt, pepper, thyme, rosemary, and paprika into a paste.
- Layer chopped carrots, celery, onion, and garlic in the bottom of your slow cooker. Pour in the chicken broth.
- Pat turkey breast dry and rub the seasoning paste all over the skin.
- Place the turkey breast on top of the vegetables, skin side up.
- Cover and cook on low for 6 to 7 hours, until internal temperature reaches 165°F.
- Optional: Broil turkey for 5 minutes to crisp the skin.
- Let rest for 10 to 15 minutes before slicing. Serve with the cooked vegetables and juices.

- Use fresh herbs if desired, tripling the quantity of dried.
- Add lemon or orange slices for a citrus twist.
- To thicken the cooking juices into a gravy, use a cornstarch slurry on the stovetop.
