- 1 pound Ribeye or Sirloin Steak
- 1 pound Baby Potatoes, halved
- 2 tablespoons Olive Oil
- 2 tablespoons Butter
- 3 Garlic Cloves, smashed
- 2 sprigs Fresh Rosemary
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1/2 teaspoon Paprika
- Fresh Parsley, for garnish
Instructions
- Preheat skillet over medium-high heat until hot.
- Toss halved potatoes with olive oil, salt, pepper, and paprika.
- Add potatoes cut-side down to skillet and cook for 10–12 minutes until golden and crisp. Remove and set aside.
- Season steak with salt and pepper on both sides.
- Add oil to skillet and sear steak for 3–4 minutes per side for medium-rare. Add butter, garlic, and rosemary during the last minute and baste steak.
- Return potatoes to skillet and toss everything in the flavored butter for 1–2 minutes.
- Slice steak, garnish with parsley, and serve hot.
Notes
- Let steak rest before slicing for juicy results.
- Use a cast iron skillet for best sear.
- Add a squeeze of lemon juice for brightness.
