- 1 ½ cups all-purpose flour
- 1 cup rolled oats
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup crushed pineapple with juice
- 1 cup grated carrots (about 2 medium)
- ½ cup brown sugar
- 2 large eggs
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a bowl, whisk flour, oats, baking powder, baking soda, salt, and cinnamon.
- In another bowl, mix pineapple, carrots, brown sugar, eggs, oil, and vanilla until well combined.
- Lightly dust loaf pan with flour or line with parchment.
- Fold dry ingredients into wet mixture until just combined.
- Pour batter into pan and bake 45–55 minutes, or until a toothpick inserted comes out clean.
- Cool 10 minutes in pan, then transfer to a wire rack. Slice and serve once cooled.
Notes
- Do not overmix batter to keep crumb tender.
- Toast oats lightly before mixing for nuttier flavor.
- Sprinkle turbinado sugar or nuts on top before baking for extra crunch.
