Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 3 garlic cloves, minced
  • 4 medium Yukon Gold potatoes, peeled and diced
  • 6 cups vegetable broth
  • 1 bunch fresh kale, stems removed and chopped
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme (optional)
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and cook for another minute.
  4. Add potatoes and pour in the vegetable broth. Stir to combine.
  5. Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
  6. Add chopped kale, salt, pepper, and thyme (if using). Simmer for 5–7 more minutes.
  7. Stir in lemon juice. Taste and adjust seasoning as needed.
  8. Serve hot with your favorite bread.
