Ingredients

- 2 tablespoons olive oil
- 1 large yellow onion, diced
- 3 garlic cloves, minced
- 4 medium Yukon Gold potatoes, peeled and diced
- 6 cups vegetable broth
- 1 bunch fresh kale, stems removed and chopped
- 1 teaspoon salt (or to taste)
- ½ teaspoon black pepper
- ½ teaspoon dried thyme (optional)
- 1 tablespoon lemon juice
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and cook for another minute.
- Add potatoes and pour in the vegetable broth. Stir to combine.
- Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
- Add chopped kale, salt, pepper, and thyme (if using). Simmer for 5–7 more minutes.
- Stir in lemon juice. Taste and adjust seasoning as needed.
- Serve hot with your favorite bread.
