Description

Shrimp & Rice is a simple yet flavorful dish combining tender shrimp sautéed in garlic and spices with fluffy, perfectly cooked rice. This quick and satisfying meal is ideal for weeknight dinners and can be easily customized with your favorite veggies or seasonings.

  • 1 lb (450g) shrimp, peeled and deveined
  • 2 tablespoons olive oil or butter
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste
  • 1 cup long-grain white rice (or jasmine rice)
  • 2 cups water or chicken broth
  • 1 tablespoon chopped parsley or cilantro (for garnish)
  • Optional: lemon wedges, diced bell peppers, or peas

Instructions

  1. In a medium saucepan, bring water or broth to a boil. Stir in rice and a pinch of salt. Cover, reduce heat, and simmer for 15–18 minutes or until rice is tender and liquid is absorbed. Remove from heat and fluff with a fork.
  2. Meanwhile, in a large skillet, heat olive oil over medium heat. Add garlic and cook until fragrant, about 30 seconds.
  3. Add shrimp to the skillet and season with paprika, cumin, salt, and pepper. Cook for 3–4 minutes, flipping once, until shrimp are pink and opaque.
  4. If using optional veggies like bell peppers or peas, sauté them in the skillet for 2–3 minutes before adding shrimp.
  5. Serve shrimp over rice and garnish with chopped parsley or cilantro and a squeeze of lemon juice, if desired.

  • Use pre-cooked shrimp to save time—just heat until warmed through.
  • Swap rice for quinoa or cauliflower rice for a lighter option.
  • Spice it up with red pepper flakes or a splash of hot sauce.
