Description

These sausage and potato foil packets are a hearty, flavorful one-pan wonder perfect for weeknights, grilling, or even camping. Packed with smoked sausage, tender potatoes, sweet peppers, and roasted onions, it’s a savory, customizable meal with easy prep and cleanup.


Ingredients

  • 1 pound smoked sausage, sliced into rounds
  • 1.5 pounds baby potatoes, halved or quartered
  • 2 bell peppers (1 red, 1 yellow), sliced
  • 1 large red onion, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to 425°F or prepare a grill over medium-high heat.
  2. In a large bowl, combine sausage, potatoes, bell peppers, and red onion. Drizzle with olive oil and sprinkle with garlic powder, paprika, Italian seasoning, salt, and pepper. Toss to coat evenly.
  3. Lay out 4 large sheets of heavy-duty foil and lightly oil the center of each sheet.
  4. Divide the sausage and vegetable mixture evenly among the foil sheets. Fold and seal the foil to create tight packets.
  5. Place packets on a baking sheet and bake for 30–35 minutes, or place on the grill and cook for 25–30 minutes, flipping once halfway through.
  6. Carefully open the packets and garnish with fresh parsley if desired.
  7. Serve directly in the foil or transfer to plates and enjoy warm.

Notes

  • Cut potatoes small to ensure they cook through evenly.
  • Use pre-cooked sausage for quicker cook time and better texture.
  • Foil packets can be made a day in advance and stored in the fridge until ready to cook.
