- 1 pound smoked sausage, sliced into rounds
- 1.5 pounds baby potatoes, halved or quartered
- 2 bell peppers (1 red, 1 yellow), sliced
- 1 large red onion, sliced
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- Optional: chopped fresh parsley for garnish
Instructions
- Preheat your oven to 425°F or prepare a grill over medium-high heat.
- In a large bowl, combine sausage, potatoes, bell peppers, and red onion. Drizzle with olive oil and sprinkle with garlic powder, paprika, Italian seasoning, salt, and pepper. Toss to coat evenly.
- Lay out 4 large sheets of heavy-duty foil and lightly oil the center of each sheet.
- Divide the sausage and vegetable mixture evenly among the foil sheets. Fold and seal the foil to create tight packets.
- Place packets on a baking sheet and bake for 30–35 minutes, or place on the grill and cook for 25–30 minutes, flipping once halfway through.
- Carefully open the packets and garnish with fresh parsley if desired.
- Serve directly in the foil or transfer to plates and enjoy warm.
