Ingredients

Scale
  • 500 g chicken breast, cut into strips
  • 3 tbsp cornflour
  • Salt and black pepper, to taste
  • 1 tsp chili flakes
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 3 spring onions, chopped
  • 3 cups cooked rice, preferably day-old
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 eggs, beaten
  • Vegetable oil, for frying
  • 3 tbsp peanut butter
  • 200 ml coconut milk
  • 1 tbsp soy sauce (for satay)
  • 1 tbsp lime juice
  • 1 tsp brown sugar
  • 1 fresh red chili, sliced for garnish

Instructions

  1. Heat your wok or large skillet over medium-high heat and prepare a small saucepan for the satay sauce.
  2. In a bowl, coat the chicken with cornflour, salt, pepper, and chili flakes, then toss well.
  3. Heat vegetable oil in the wok until hot and fry chicken pieces until golden and crispy. Remove and set aside.
  4. In the same wok, add garlic and peppers, sauté until fragrant. Push to one side, pour in beaten eggs, scramble lightly, then mix in the rice.
  5. Add soy sauce and sesame oil, stir-fry until everything is well coated and heated through.
  6. Return the chicken to the wok and toss together with the fried rice and vegetables.
  7. In a saucepan, combine peanut butter, coconut milk, soy sauce, lime juice, and brown sugar. Heat gently until smooth and creamy.
  8. Serve the fried rice topped with crispy chicken, drizzle satay sauce on top, and garnish with red chili and spring onions.

Notes

  • Use day-old rice for best fried rice texture.
  • Double fry the chicken for extra crispiness.
  • Adjust chili flakes for your preferred spice level.
  • Homemade satay sauce tastes fresher than store-bought versions.
