Ingredients

  • 30 g butter
  • 1 tablespoon olive oil
  • 120 g mixed salad greens
  • 150 g cherry tomatoes
  • 1 medium cucumber
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions

  1. Season the chicken breast pieces evenly with salt and black pepper.
  2. Heat a large skillet over medium heat and add the olive oil and butter.
  3. Once the butter has melted, place the chicken in the skillet in a single layer.
  4. Cook the chicken for 4 to 5 minutes per side until golden and fully cooked.
  5. Remove the chicken from the pan and let it rest briefly.
  6. Arrange the mixed salad greens in a bowl and top with cherry tomatoes and cucumber slices.
  7. Add the warm butter fried chicken on top of the salad.
  8. Finish with lemon juice just before serving.
