Instructions
- Season the chicken breast pieces evenly with salt and black pepper.
- Heat a large skillet over medium heat and add the olive oil and butter.
- Once the butter has melted, place the chicken in the skillet in a single layer.
- Cook the chicken for 4 to 5 minutes per side until golden and fully cooked.
- Remove the chicken from the pan and let it rest briefly.
- Arrange the mixed salad greens in a bowl and top with cherry tomatoes and cucumber slices.
- Add the warm butter fried chicken on top of the salad.
- Finish with lemon juice just before serving.
