- 2 cups long grain rice, rinsed
- 1 pound lamb shoulder, cut into bite sized cubes
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 2 medium carrots, sliced
- 1 medium zucchini, chopped
- 1 large red bell pepper, sliced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cups chicken broth, warm
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat a large heavy pot over medium heat.
- Add olive oil and brown the lamb cubes for 5 to 7 minutes. Remove and set aside.
- In the same pot, cook onion and garlic for 3 minutes until fragrant.
- Add carrots, zucchini, bell pepper, cumin, coriander, salt, and black pepper. Return lamb to the pot and stir in rinsed rice.
- Pour in warm chicken broth and bring to a gentle boil.
- Reduce heat to low, cover, and cook for 18 to 20 minutes until rice is tender and liquid is absorbed.
- Let rest covered for 5 minutes, fluff with a fork, and sprinkle with fresh parsley before serving.
Notes
- Do not stir the rice frequently during cooking to keep it fluffy.
- Allow the dish to rest before serving for better texture.
- Use warm broth for deeper flavor.
