Description
A moist, tender banana bread studded with chopped Reese’s Peanut Butter Cups for pockets of melty chocolate and peanut butter in every slice.
Ingredients
Scale
- 3 large very ripe bananas, mashed
- 2 cups (240 g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (113 g) unsalted butter, melted and cooled
- 1/2 cup (100 g) packed brown sugar
- 1/4 cup (50 g) granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 1/2 cups (about 225 g) Reese’s Peanut Butter Cups, chopped (mini or regular)
Instructions
- Preheat Your Equipment: Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper and lightly grease the sides.
- Combine Ingredients: In a medium bowl whisk together 2 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt. In a large bowl mash 3 ripe bananas, then stir in 1/2 cup melted butter, 1/2 cup brown sugar, 1/4 cup granulated sugar, 2 eggs, and 1 teaspoon vanilla until combined.
- Prepare Your Cooking Vessel: Ensure the parchment-lined loaf pan is ready and lightly greased to prevent sticking and help with clean removal after baking.
- Assemble the Dish: Gently fold the dry ingredients into the wet banana mixture until just combined, taking care not to overmix. Fold in 1 1/2 cups chopped Reese’s Peanut Butter Cups, reserving a handful to sprinkle on top.
- Cook to Perfection: Pour the batter into the prepared loaf pan, smooth the top, and scatter the reserved chopped Reese’s on top. Bake at 350°F (175°C) for 50 to 60 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Finishing Touches: Remove the loaf from the oven and let it cool in the pan for 10 minutes. Carefully lift it out using the parchment and transfer to a cooling rack to cool completely for clean slices and fully set crumb.
- Serve and Enjoy: Slice and serve warm for melty peanut butter cup pockets, or let cool and store. Optionally reheat slices briefly before serving for that just-baked feel.
Notes
- Tip: Use very ripe bananas with lots of brown spots for maximum sweetness and moisture.
- Tip: Chop Reese’s into small pieces so they distribute evenly and do not all sink to the bottom.
- Tip: Do not overmix the batter; fold until just combined to keep the bread tender.
- Tip: Tent with foil if the top browns too quickly during baking.
