  • ¾ cup granulated sugar
  • ¼ cup brown sugar

  • 1 teaspoon vanilla extract
  • ½ cup melted butter
  • ½ cup sour cream
  • 1 ½ cups powdered sugar
  • 6 tablespoons brown butter

Instructions

  1. Preheat the oven to 350°F and line a 9×9-inch baking dish with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In another bowl, mix beet puree, granulated sugar, brown sugar, eggs, vanilla, and melted butter until smooth.
  4. Stir the dry ingredients into the wet mixture until fully combined.
  5. Pour the batter into the prepared dish and smooth the top. Tap the pan gently to remove air bubbles.
  6. Bake for 25–30 minutes or until a toothpick inserted comes out with a few moist crumbs. Let cool completely.
  7. For the frosting, brown the butter in a small saucepan until golden and fragrant, then let cool slightly.
  8. In a bowl, whisk sour cream, powdered sugar, and browned butter until smooth and creamy.
  9. Spread the frosting over the cooled bars, slice, and serve.
