Description
Creamy, fruity, and delightfully bite-sized, these Raspberry Cream Cheese Bites combine a buttery graham cracker crust, velvety cream cheese filling, and juicy fresh raspberries for the perfect no-bake treat.
Ingredients
Scale
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup graham cracker crumbs
- 4 tablespoons butter, melted
- 1 cup fresh raspberries
Instructions
- Chill your mixing bowl for a few minutes so the cream cheese filling stays cool while mixing.
- Mix graham cracker crumbs with melted butter until sandy and press into the base of mini muffin pan cups.
- Line each cavity with paper liners to make removing bites easier.
- Beat softened cream cheese, powdered sugar, and vanilla until creamy. Pipe or spoon the mixture over the crusts.
- Chill in the refrigerator for at least 2 hours until set.
- Top each bite with a fresh raspberry just before serving.
- Arrange on a platter, dust lightly with powdered sugar, and enjoy.
Notes
- Use firm, fresh raspberries so they don’t release excess moisture.
- Do not skip chilling time, or the bites may fall apart.
- For extra flair, drizzle with melted chocolate before adding raspberries.
- Press the crust firmly so it holds together when set.
