- 2 tablespoons olive oil
- 1 pound chicken breast, diced into small cubes
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 small carrot, grated
- 2 tablespoons tomato paste
- 1 can (14 ounces) crushed tomatoes
- 1 teaspoon dried Italian herbs
- Salt and black pepper to taste
- 12 ounces spaghetti
- 1/2 cup Parmesan cheese, freshly grated
- Fresh basil leaves for garnish
Instructions
- Set a large skillet over medium heat and bring a pot of salted water to a boil for the pasta.
- Heat olive oil in the skillet, add onion and garlic, and sauté until fragrant. Stir in grated carrot and cook for another minute.
- Add diced chicken, season with salt and pepper, and cook until lightly browned.
- Stir in tomato paste, crushed tomatoes, and Italian herbs. Let the sauce simmer gently for about 10 minutes.
- Meanwhile, cook spaghetti until al dente, then drain while reserving 1/2 cup of the pasta water.
- Toss the pasta with the sauce, adding a splash of the reserved water for a silky finish.
- Serve hot, topped with Parmesan and fresh basil.
