Description

Ingredients

  • 1 cup pumpkin puree
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup parmesan cheese, freshly grated
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon dried sage
  • 1 cup reserved pasta water, as needed

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Cook the pasta until al dente, reserve 1 cup of pasta water, then drain.
  3. Heat olive oil in a wide skillet over medium heat.
  4. Add minced garlic and cook until fragrant.
  5. Stir in pumpkin puree, heavy cream, salt, black pepper, and dried sage.
  6. Let the sauce simmer gently for a few minutes.
  7. Add cooked pasta to the skillet.
  8. Stir in parmesan cheese and loosen the sauce with reserved pasta water as needed.
  9. Serve hot with extra parmesan if desired.

  • Add pasta water gradually to control sauce thickness.
