- 12 ounces pasta
- 1 cup pumpkin puree
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup parmesan cheese, freshly grated
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 0.5 teaspoon dried sage
- 1 cup reserved pasta water, as needed
Instructions
- Bring a large pot of salted water to a boil.
- Cook the pasta until al dente, reserve 1 cup of pasta water, then drain.
- Heat olive oil in a wide skillet over medium heat.
- Add minced garlic and cook until fragrant.
- Stir in pumpkin puree, heavy cream, salt, black pepper, and dried sage.
- Let the sauce simmer gently for a few minutes.
- Add cooked pasta to the skillet.
- Stir in parmesan cheese and loosen the sauce with reserved pasta water as needed.
- Serve hot with extra parmesan if desired.
Notes
- Add pasta water gradually to control sauce thickness.
- Taste and adjust seasoning before serving.
- Use freshly grated cheese for best texture.
