Description

A creamy and festive pineapple cheese tart with a buttery crust and juicy pineapple topping, perfect for celebrations or sweet gatherings.


Ingredients

  • 1 ½ cups all purpose flour
  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar, divided
  • 16 ounces cream cheese, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup pineapple slices, well drained

Instructions

  1. Preheat oven to 350°F and lightly grease a 9 inch tart pan.
  2. Mix flour, melted butter, and 1/4 cup sugar until crumbly. In another bowl beat cream cheese with remaining 1/4 cup sugar until smooth, then add eggs and vanilla and mix well.
  3. Press crust mixture into the tart pan evenly across the base and sides.
  4. Pour filling into crust and smooth the top. Arrange pineapple slices neatly over the surface.
  5. Bake for 35 minutes or until the center is set with a slight jiggle.
  6. Cool completely, then chill for at least 1 hour before slicing and serving.
