- 1 ½ cups all purpose flour
- ½ cup unsalted butter, melted
- ½ cup granulated sugar, divided
- 16 ounces cream cheese, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup pineapple slices, well drained
Instructions
- Preheat oven to 350°F and lightly grease a 9 inch tart pan.
- Mix flour, melted butter, and 1/4 cup sugar until crumbly. In another bowl beat cream cheese with remaining 1/4 cup sugar until smooth, then add eggs and vanilla and mix well.
- Press crust mixture into the tart pan evenly across the base and sides.
- Pour filling into crust and smooth the top. Arrange pineapple slices neatly over the surface.
- Bake for 35 minutes or until the center is set with a slight jiggle.
- Cool completely, then chill for at least 1 hour before slicing and serving.
