Description

Crunchy clusters of corn cereal and buttery pecans coated in a glossy brown-sugar praline caramel and finished with a ribbon of melted semi-sweet chocolate, a nostalgic snack that is perfect for gifting or sharing.

Ingredients

Scale
  • 6 cups Corn Cereal Squares
  • 2 cups Pecans, chopped
  • 1 cup Unsalted Butter, melted
  • 1 cup Brown Sugar, packed
  • 1/2 cup Light Corn Syrup
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • 1 cup Semi-Sweet Chocolate Chips, melted for drizzling

Instructions

  1. Preheat oven to 250°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine 6 cups corn cereal squares and 2 cups chopped pecans.
  3. In a medium saucepan over medium-low heat, melt 1 cup unsalted butter, then stir in 1 cup packed brown sugar and 1/2 cup light corn syrup, cooking until smooth and combined. Stir in 1/2 teaspoon salt and 1 teaspoon vanilla extract.
  4. Pour the hot praline mixture over the cereal and pecans, tossing gently until everything is evenly coated.
  5. Spread the coated mixture in an even layer on the prepared baking sheet.
  6. Bake for 45 minutes, gently stirring every 15 minutes to ensure even coating and caramelization.
  7. Remove from oven and let cool completely on the baking sheet until the praline caramel sets and the clusters harden.
  8. Melt 1 cup semi-sweet chocolate chips and drizzle over the cooled clusters. Allow chocolate to set, then break into clusters and serve or store.

Notes

  • Allow the mix to cool completely before breaking into clusters to ensure the best crunch.
  • Use fresh pecans for optimal flavor; toast them lightly beforehand for extra depth.
  • Store in an airtight container at room temperature for up to 1 week or freeze for longer storage.
  • For a dairy-free version, substitute coconut oil for the butter and use dairy-free chocolate.
