Description

A light, airy, and nostalgic no-bake dessert combining juicy crushed pineapple, fluffy whipped topping, mini marshmallows, and a creamy pudding-sour cream base, perfect for potlucks and summer gatherings.

Ingredients

Scale
  • 20 ounces crushed pineapple, canned and well-drained
  • 8 ounces whipped topping, thawed
  • 2 cups mini marshmallows
  • 3.4 ounces instant vanilla pudding mix (one standard package)
  • 1 cup sour cream
  • 1/2 cup chopped pecans, optional

Instructions

  1. Place a large mixing bowl in the refrigerator for a few minutes to chill and keep ingredients cold.
  2. In the chilled bowl, combine the drained crushed pineapple with the instant vanilla pudding mix and stir until evenly blended.
  3. Set out your serving bowl or individual dessert glasses for easy assembly and presentation.
  4. Gently fold the sour cream into the pineapple-pudding mixture, then fold in the whipped topping until the mixture is smooth and airy. Add the mini marshmallows and chopped pecans if using.
  5. No cooking required, simply cover and refrigerate to allow the mixture to set and the flavors to meld. Chill for at least 2 hours, or overnight for best results.
  6. Before serving, smooth the top, and add a few extra mini marshmallows or chopped nuts as a garnish for texture and visual appeal.
  7. Scoop into bowls or serve in glasses chilled, enjoy immediately.

Notes

  • Drain the pineapple thoroughly to prevent a watery dessert.
  • Fold the whipped topping gently to keep the fluff light and airy.
  • Chill at least 2 hours, overnight yields best texture and flavor melding.
  • Can substitute plain Greek yogurt for sour cream for a tangier profile and more protein.
  • Store in an airtight container in the refrigerator up to 3 days; freezing will change the texture.
