Description

  • 6 cups sliced fresh peaches (about 6 to 7 medium peaches)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, divided
  • 1/4 cup all purpose flour (for filling)
  • 1/2 cup all purpose flour (for topping)
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup old fashioned oats
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and lightly grease a 9 inch baking dish.
  2. In a large bowl, combine sliced peaches, granulated sugar, 1/4 cup brown sugar, 1/4 cup flour, cornstarch, cinnamon, salt, and vanilla extract. Toss until evenly coated.
  3. Transfer the peach mixture into the prepared baking dish and spread evenly.
  4. In a separate bowl, mix oats, remaining 1/2 cup flour, remaining 1/4 cup brown sugar, and melted butter until crumbly.
  5. Sprinkle the oat mixture evenly over the peaches.
  6. Bake for 40 to 45 minutes, until the topping is golden brown and the filling is bubbling around the edges.
  7. Remove from oven and let rest for at least 10 minutes before serving to allow the filling to thicken slightly.
