Description

- 6 cups sliced fresh peaches (about 6 to 7 medium peaches)
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, divided
- 1/4 cup all purpose flour (for filling)
- 1/2 cup all purpose flour (for topping)
- 1 tablespoon cornstarch
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup old fashioned oats
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350 degrees Fahrenheit and lightly grease a 9 inch baking dish.
- In a large bowl, combine sliced peaches, granulated sugar, 1/4 cup brown sugar, 1/4 cup flour, cornstarch, cinnamon, salt, and vanilla extract. Toss until evenly coated.
- Transfer the peach mixture into the prepared baking dish and spread evenly.
- In a separate bowl, mix oats, remaining 1/2 cup flour, remaining 1/4 cup brown sugar, and melted butter until crumbly.
- Sprinkle the oat mixture evenly over the peaches.
- Bake for 40 to 45 minutes, until the topping is golden brown and the filling is bubbling around the edges.
- Remove from oven and let rest for at least 10 minutes before serving to allow the filling to thicken slightly.
Notes
- Use ripe but firm peaches for best texture.
- If using frozen peaches, thaw and drain excess liquid before mixing.
- If the topping browns too quickly, loosely cover with foil during baking.
- Let the crisp rest before serving to avoid a runny filling.
