- 12 lasagna noodle sheets, cooked al dente
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup pepperoni slices
- 3 cups marinara sauce
- 2 tablespoons fresh basil or parsley, chopped, for garnish
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Cook lasagna noodles in a large pot of salted boiling water until al dente, then drain and lay flat on a lightly oiled sheet to prevent sticking.
- In a mixing bowl, combine 1 cup shredded mozzarella, ricotta, Parmesan, egg, Italian seasoning, salt, and black pepper, stirring until smooth and well incorporated.
- Spoon about 1 cup marinara sauce across the bottom of the prepared baking dish and spread it evenly.
- Lay one lasagna noodle flat, spread an even layer of the ricotta-cheese mixture across the noodle, place 2 to 3 pepperoni slices along one edge, and tightly roll the noodle from that edge to create a single roll. Repeat with remaining noodles and filling.
- Place each roll seam-side down in the baking dish, arranging them snugly in rows to fit. Pour remaining marinara sauce over the top of the rolls, then sprinkle with the remaining shredded mozzarella.
- Cover the dish with foil and bake for 20 minutes, then remove the foil and bake an additional 10 to 15 minutes until the cheese is golden and bubbling.
- Remove from oven and let the rolls rest for 5 minutes. Sprinkle with chopped fresh basil or parsley before serving.
- Serve warm, portioning one roll per person, and enjoy.
Notes
- Cook noodles al dente to prevent tearing when rolling.
- Cover with foil during the first part of baking to keep rolls moist, then uncover to brown the cheese.
- Assemble ahead and refrigerate until ready to bake for an easy dinner prep.
- Freeze unbaked rolls in the baking dish covered tightly, then bake from frozen adding about 15 minutes to the cook time.
