Description

  • 12 lasagna noodle sheets, cooked al dente
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup pepperoni slices
  • 3 cups marinara sauce
  • 2 tablespoons fresh basil or parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Cook lasagna noodles in a large pot of salted boiling water until al dente, then drain and lay flat on a lightly oiled sheet to prevent sticking.
  3. In a mixing bowl, combine 1 cup shredded mozzarella, ricotta, Parmesan, egg, Italian seasoning, salt, and black pepper, stirring until smooth and well incorporated.
  4. Spoon about 1 cup marinara sauce across the bottom of the prepared baking dish and spread it evenly.
  5. Lay one lasagna noodle flat, spread an even layer of the ricotta-cheese mixture across the noodle, place 2 to 3 pepperoni slices along one edge, and tightly roll the noodle from that edge to create a single roll. Repeat with remaining noodles and filling.
  6. Place each roll seam-side down in the baking dish, arranging them snugly in rows to fit. Pour remaining marinara sauce over the top of the rolls, then sprinkle with the remaining shredded mozzarella.
  7. Cover the dish with foil and bake for 20 minutes, then remove the foil and bake an additional 10 to 15 minutes until the cheese is golden and bubbling.
  8. Remove from oven and let the rolls rest for 5 minutes. Sprinkle with chopped fresh basil or parsley before serving.
  9. Serve warm, portioning one roll per person, and enjoy.
