Instructions
- Line a baking sheet with parchment paper and set aside.
- In a mixing bowl, combine powdered sugar, sweetened condensed milk, peppermint extract, and softened butter. Mix until a thick, smooth dough forms.
- Lightly dust your hands with powdered sugar to prevent sticking.
- Roll the filling into small balls, then flatten each into discs about 1/4 inch thick. Place on the prepared baking sheet.
- Refrigerate the discs for 30 minutes until firm.
- Melt dark chocolate chips gently in a microwave-safe bowl, stirring frequently until smooth.
- Dip each chilled disc into the melted chocolate, coating completely. Allow excess chocolate to drip off before placing back on the parchment paper.
- Let the chocolate set completely at room temperature or in the refrigerator before serving.
