Ingredients
- Pasta: 12 ounces (spaghetti or your favorite shape)
- Ripe Avocados: 2 medium
- Garlic Cloves: 2, minced
- Fresh Lemon Juice: 2 tablespoons
- Olive Oil: 2 tablespoons
- Fresh Basil: ¼ cup, chopped
- Salt: ½ teaspoon
- Black Pepper: ¼ teaspoon
- Cherry Tomatoes (optional): ½ cup, halved
- Pasta Water: ¼ cup (reserved)
Instructions
- In a food processor or blender, combine avocados, garlic, lemon juice, olive oil, basil, salt, and pepper. Blend until smooth and creamy.
- Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package instructions.
- Reserve ¼ cup of pasta water, then drain the pasta.
- Return the pasta to the pot, add the avocado sauce, and toss to coat. Use reserved pasta water as needed to thin the sauce.
- Optional: Stir in cherry tomatoes and adjust seasoning to taste.
- Serve warm, garnished with extra basil or chili flakes if desired.
