Ingredients

  • Pasta: 12 ounces (spaghetti or your favorite shape)
  • Ripe Avocados: 2 medium
  • Garlic Cloves: 2, minced
  • Fresh Lemon Juice: 2 tablespoons
  • Olive Oil: 2 tablespoons
  • Fresh Basil: ¼ cup, chopped
  • Salt: ½ teaspoon
  • Black Pepper: ¼ teaspoon
  • Cherry Tomatoes (optional): ½ cup, halved
  • Pasta Water: ¼ cup (reserved)

Instructions

  1. In a food processor or blender, combine avocados, garlic, lemon juice, olive oil, basil, salt, and pepper. Blend until smooth and creamy.
  2. Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package instructions.
  3. Reserve ¼ cup of pasta water, then drain the pasta.
  4. Return the pasta to the pot, add the avocado sauce, and toss to coat. Use reserved pasta water as needed to thin the sauce.
  5. Optional: Stir in cherry tomatoes and adjust seasoning to taste.
  6. Serve warm, garnished with extra basil or chili flakes if desired.
