- 1/2 cup (1 stick) unsalted butter
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon granulated sugar
- 4 large eggs
- 1 1/2 cups heavy whipping cream
- 1/4 cup powdered sugar (plus more for dusting)
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh strawberries, thinly sliced
- 2 tablespoons sliced almonds
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil.
- Add the flour all at once, stirring vigorously until a smooth dough forms and pulls away from the pan.
- Transfer the dough to a bowl and let it cool slightly. Beat in the eggs one at a time until smooth and glossy.
- Pipe or spoon the dough into a ring shape, about 8 inches wide, onto the parchment-lined sheet.
- Sprinkle sliced almonds over the top and bake for 25–30 minutes until golden brown.
- Turn off the oven and leave the door slightly ajar for 10 minutes to dry the pastry.
- Cool completely, then slice horizontally with a serrated knife.
- Whip the cream with powdered sugar and vanilla until soft peaks form.
- Layer whipped cream and sliced strawberries between the pastry halves, replace the top, and dust with powdered sugar.
- Serve immediately and enjoy the crisp pastry and creamy filling.

- Do not open the oven while baking or the pastry may deflate.
- Use chilled cream for better whipping results.
