Description

Golden, crispy Yukon Gold potatoes roasted with caramelized onions, garlic, and rosemary for the perfect comforting side dish.

Ingredients

Scale
  • 2 pounds Yukon Gold Potatoes, cut into bite-sized chunks
  • 2 medium Yellow Onions, sliced into thin wedges
  • 3 tablespoons Olive Oil
  • 3 Garlic Cloves, minced
  • 1 tablespoon Fresh Rosemary, chopped
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper, freshly ground

Instructions

  1. Preheat your oven to 425°F (220°C) and allow it to fully heat.
  2. In a large mixing bowl, combine potatoes, onions, garlic, olive oil, rosemary, salt, and pepper. Toss until well coated.
  3. Prepare a rimmed baking sheet by lining it with parchment paper or lightly greasing it with oil.
  4. Spread the potatoes and onions evenly in a single layer on the baking sheet.
  5. Roast for 25–30 minutes, flipping halfway through, until the potatoes are golden and crispy.
  6. Taste and adjust seasoning, adding more salt or herbs if desired.
  7. Transfer to a serving dish and enjoy warm.

Notes

  • Cut potatoes into equal-sized pieces for even cooking.
  • Avoid overcrowding the pan to achieve crispiness.
  • Leftovers can be stored for up to 3 days and reheated in the oven or skillet.
