Description

Ingredients

  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon fresh orange zest
  • 1/2 cup fresh orange juice
  • 1/2 cup whole milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375 F and line a 12 cup muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, rub the orange zest into the sugar, then whisk in eggs, orange juice, milk, vegetable oil, and vanilla extract until smooth.
  4. Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
  5. Divide the batter evenly among the muffin cups, filling each about three quarters full.
  6. Bake for 18 to 22 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.
  7. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
