- 2 teaspoons baking powder

- 1 tablespoon fresh orange zest
- 1/2 cup fresh orange juice
- 1/2 cup whole milk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 375 F and line a 12 cup muffin tin with paper liners.
- In a large bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, rub the orange zest into the sugar, then whisk in eggs, orange juice, milk, vegetable oil, and vanilla extract until smooth.
- Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
- Divide the batter evenly among the muffin cups, filling each about three quarters full.
- Bake for 18 to 22 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.
- Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Zest only the bright orange part of the peel to avoid bitterness.
- Use freshly squeezed orange juice for the best flavor.
- Store in an airtight container at room temperature for up to 3 days.
- Freeze individually wrapped muffins for up to 2 months.
