- 1 pound Kielbasa sausage, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 4 cups chicken broth
- 1 (12 ounce) package egg noodles
- 1 teaspoon Italian seasoning
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon red pepper flakes (optional)
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- In a large pot or Dutch oven, cook the sliced Kielbasa over medium heat for 4–5 minutes until browned. Remove excess grease if necessary.
- Add chopped onion and cook for 3–4 minutes, until softened. Stir in minced garlic and cook for 30 seconds until fragrant.
- Pour in crushed tomatoes and chicken broth. Stir in egg noodles, Italian seasoning, smoked paprika, and red pepper flakes (if using).
- Bring to a boil, then reduce heat to medium-low. Cover and simmer for 10–12 minutes, stirring occasionally, until noodles are tender and cooked through.
- Stir in shredded cheddar cheese and heavy cream. Let simmer uncovered for another 2–3 minutes until sauce thickens and becomes creamy.
- Garnish with chopped parsley and serve warm.
