  • 1 pound Kielbasa sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups chicken broth
  • 1 (12 ounce) package egg noodles
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. In a large pot or Dutch oven, cook the sliced Kielbasa over medium heat for 4–5 minutes until browned. Remove excess grease if necessary.
  2. Add chopped onion and cook for 3–4 minutes, until softened. Stir in minced garlic and cook for 30 seconds until fragrant.
  3. Pour in crushed tomatoes and chicken broth. Stir in egg noodles, Italian seasoning, smoked paprika, and red pepper flakes (if using).
  4. Bring to a boil, then reduce heat to medium-low. Cover and simmer for 10–12 minutes, stirring occasionally, until noodles are tender and cooked through.
  5. Stir in shredded cheddar cheese and heavy cream. Let simmer uncovered for another 2–3 minutes until sauce thickens and becomes creamy.
