Description

A comforting, velvety pasta dish made in just one pot, featuring tender noodles coated in a creamy garlic sauce with Parmesan and fresh parsley.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 6 cloves garlic, finely minced
  • 12 ounces spaghetti or linguine
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, freshly grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Place a large pot over medium heat and drizzle in olive oil.
  2. Add minced garlic and sauté for 1–2 minutes until fragrant.
  3. Pour in the broth and bring it to a gentle boil.
  4. Add pasta directly into the pot, stirring to coat with broth.
  5. Simmer uncovered, stirring occasionally, until pasta is al dente and liquid is mostly absorbed (about 10–12 minutes).
  6. Stir in cream, Parmesan, salt, and black pepper until creamy. Adjust thickness with a splash of broth if needed.
  7. Sprinkle with fresh parsley and serve warm.

Notes

  • Stir often to prevent pasta from clumping.
  • Add cream at the end to avoid curdling.
  • Use freshly grated Parmesan for the smoothest sauce.
  • Reheat with a splash of broth or cream to revive the sauce.
