This One-Pot Chicken Parmesan Pasta combines tender chicken, pasta, and a rich tomato sauce all cooked together in one pot for an easy, comforting, and cheesy dinner that tastes like a hug in every bite.

- 1 pound boneless skinless chicken breasts, cut into bite-size pieces
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 small onion, finely chopped
- 2 cups crushed tomatoes
- 2 ½ cups chicken broth
- 12 ounces uncooked pasta (penne or rotini)
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- 1 ½ cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Fresh basil or parsley, for garnish
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat.
- Add diced chicken, season with salt and pepper, and sauté until lightly golden.
- Stir in onion and garlic and cook until fragrant.
- Pour in crushed tomatoes and chicken broth, then add Italian seasoning and stir well.
- Add uncooked pasta, making sure it’s submerged in the liquid.
- Cover and simmer for 10–12 minutes, stirring occasionally, until pasta is tender and sauce thickens.
- Stir in half of the mozzarella and Parmesan until melted, then top with the rest.
- Cover again for a few minutes until cheese melts beautifully.
- Garnish with fresh basil or parsley before serving.
Notes
- Stir occasionally while cooking to prevent pasta from sticking.
- Add a splash of cream at the end for a silkier texture.
- Use freshly grated cheese for the best melt and flavor.
- Leftovers can be stored in the fridge for up to 3 days.
