Description

This One-Pot Chicken Parmesan Pasta combines tender chicken, pasta, and a rich tomato sauce all cooked together in one pot for an easy, comforting, and cheesy dinner that tastes like a hug in every bite.


Ingredients

  • 1 pound boneless skinless chicken breasts, cut into bite-size pieces
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 small onion, finely chopped
  • 2 cups crushed tomatoes
  • 2 ½ cups chicken broth
  • 12 ounces uncooked pasta (penne or rotini)
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil or parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium heat.
  2. Add diced chicken, season with salt and pepper, and sauté until lightly golden.
  3. Stir in onion and garlic and cook until fragrant.
  4. Pour in crushed tomatoes and chicken broth, then add Italian seasoning and stir well.
  5. Add uncooked pasta, making sure it’s submerged in the liquid.
  6. Cover and simmer for 10–12 minutes, stirring occasionally, until pasta is tender and sauce thickens.
  7. Stir in half of the mozzarella and Parmesan until melted, then top with the rest.
  8. Cover again for a few minutes until cheese melts beautifully.
  9. Garnish with fresh basil or parsley before serving.

Notes

  • Stir occasionally while cooking to prevent pasta from sticking.
  • Add a splash of cream at the end for a silkier texture.
  • Use freshly grated cheese for the best melt and flavor.
  • Leftovers can be stored in the fridge for up to 3 days.
