Description
A warm, chewy skillet cookie made with hearty oats and sweet raisins, served straight from the pan with a smooth honey cream that melts into every bite.
Ingredients
- Unsalted butter – ½ cup
- Brown sugar – ¾ cup
- Granulated sugar – ¼ cup
- Large egg – 1
- Vanilla extract – 1 teaspoon
- All-purpose flour – ¾ cup
- Old-fashioned rolled oats – 1½ cups
- Baking soda – ½ teaspoon
- Ground cinnamon – ½ teaspoon
- Salt – ¼ teaspoon
- Raisins – ¾ cup
- Heavy cream – ½ cup
- Honey – 3 tablespoons
Instructions
- Preheat the oven to 350°F and lightly grease a 10-inch cast iron skillet.
- In a mixing bowl, stir together the melted butter, brown sugar, and granulated sugar until smooth.
- Add the egg and vanilla extract, mixing until fully combined.
- Gently fold in the flour, baking soda, cinnamon, salt, oats, and raisins until just combined.
- Spread the dough evenly into the prepared skillet.
- Bake for 20 to 25 minutes until the edges are set and the center is still soft.
- In a separate bowl, whip the heavy cream with the honey until thick and creamy.
- Let the cookie cool slightly, then serve warm with honey cream spooned on top.
Notes
- For a gooier center, remove the skillet from the oven while the middle still looks slightly underbaked.
- Store leftovers covered at room temperature for one day or refrigerate for up to three days.
- The honey cream should be kept chilled and stirred before serving.
