Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together 2 cups rolled oats, 1 cup all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt until evenly combined.
- In a separate large bowl, cream 1 cup softened unsalted butter with 1 cup packed brown sugar and 1/2 cup granulated sugar until light and fluffy.
- Beat in 1 large egg and 1 teaspoon vanilla extract to the creamed butter and sugars until smooth.
- Gradually fold the dry oat and flour mixture into the wet ingredients just until combined, taking care not to overmix.
- Scoop tablespoon-sized portions of dough, roll into balls, and place them about 2 inches apart on the prepared baking sheets.
- Bake for 10 to 12 minutes, until edges are golden brown and centers are just set.
- Let cookies rest on the baking sheet for 5 minutes to firm up, then transfer to a cooling rack to cool completely.
- Serve warm or store cooled cookies in an airtight container for up to one week or freeze for longer storage.
