- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter (melted)
- 1/4 cup granulated sugar
- 2 (3.4 oz) boxes instant lemon pudding mix
- 2 3/4 cups cold whole milk
- 8 oz whipped topping (thawed)
- 1 tsp lemon zest (optional)
- 1 tbsp powdered sugar (optional garnish)
Instructions
- In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar until well mixed.
- Press the mixture firmly into the bottom of a parchment-lined 9×13 inch baking dish. Place in the freezer to chill.
- In a separate bowl, whisk together lemon pudding mix and cold milk for about 2 minutes until thickened.
- Gently fold in the whipped topping until smooth and fluffy.
- Spread the lemon mixture evenly over the chilled crust and smooth the top with a spatula.
- Optional: Sprinkle with lemon zest or dust with powdered sugar.
- Refrigerate for at least 4 hours or until set. Slice into bars and serve chilled.
Notes
- For clean slices, chill overnight and use a knife dipped in hot water.
- Customize with berries or different crusts.
- Store leftovers in the fridge for up to 4 days.
