Instructions

  1. Make the crust: In a medium bowl, mix chocolate cookie crumbs and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Chill in the refrigerator while you prepare the filling.
  2. Make the filling: In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined and fluffy.
  4. Spoon the filling onto the prepared crust and smooth the top. Refrigerate for at least 6 hours, or overnight, until set.
  5. Add topping: Once set, spread the cherry pie filling evenly over the top of the cheesecake. Garnish with chocolate shavings or curls if desired.
  6. Carefully remove the cheesecake from the springform pan, slice, and serve chilled.
