Description

  • 1 medium yellow onion, thinly sliced
  • 3 tablespoons fresh mint leaves, chopped
  • 2 tablespoons unsalted butter
  • 1 tablespoon extra virgin olive oil

  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon fresh lemon juice

Instructions

  1. Heat a sauté pan over medium heat for one minute.
  2. Add 2 tablespoons butter and 1 tablespoon olive oil to the pan and let them melt together.
  3. Toss in the thinly sliced onion and cook for 5 to 7 minutes, stirring occasionally, until the onion is soft and lightly golden.
  4. Add 2 cups peas to the pan and stir gently to coat them in the butter and onion mixture.
  5. Cook the peas for 3 to 5 minutes until they are tender but still bright green.
  6. Stir in 3 tablespoons chopped fresh mint, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1 teaspoon lemon juice. Mix briefly to combine and warm the mint without overcooking it.
  7. Transfer to a serving bowl and serve immediately.

Notes

  • If using frozen peas, thaw briefly and pat dry to avoid excess water in the pan.
  • Add the mint at the end to preserve its fresh aroma and color.
