- 2 packs instant noodles (about 170 grams total)
- 2 large eggs, lightly beaten
- 1 small carrot, thinly sliced
- 2 stalks green onions, sliced
- 2 cloves garlic, minced
- 2 tablespoons sweet soy sauce
- 1 tablespoon soy sauce
- 1 tablespoon vegetable oil
- 1 cup shredded mozzarella cheese (about 100 grams)
- 1/4 teaspoon white pepper
Instructions
- Heat a large wok or skillet over medium high heat and add vegetable oil.
- In a small bowl, mix sweet soy sauce, soy sauce, and white pepper. Set aside.
- Add minced garlic to the hot oil and sauté for about 30 seconds until fragrant.
- Push garlic to the side, pour in the beaten eggs, and scramble until just set. Add cooked noodles and sliced carrot, tossing well.
- Pour the sauce mixture over the noodles and stir fry for 2 to 3 minutes until evenly coated and slightly caramelized.
- Sprinkle shredded mozzarella evenly over the hot noodles, cover the pan briefly for 1 to 2 minutes until melted. Add green onions on top.
- Serve hot and enjoy immediately while the cheese is stretchy and creamy.
Notes
- Cook the noodles just until tender to avoid a mushy texture.
- Use freshly grated mozzarella for smoother melting.
- Adjust the amount of sweet soy sauce to control sweetness.
- For extra heat, add a small spoon of chili paste while stir frying.
