Description

Thick rounds of sweet potatoes roasted until caramelized on the outside and silky soft inside, finished with butter, garlic, and herbs for a melt in your mouth side dish.


Ingredients

  • 3 large sweet potatoes, peeled and sliced into 1 inch rounds
  • 3 tablespoons olive oil
  • 2 tablespoons melted butter or vegan butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 garlic cloves, crushed
  • 1/2 cup vegetable broth
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Toss sweet potato rounds with olive oil, melted butter, salt, pepper, and crushed garlic.
  3. Arrange the slices on a baking sheet in a single layer.
  4. Roast for 20 minutes, then flip each potato piece.
  5. Pour vegetable broth onto the tray and continue roasting for 15 to 20 minutes until tender.
  6. Sprinkle with fresh thyme and let rest briefly.
  7. Serve warm while the centers are still soft and velvety.
