Description

- 3 large sweet potatoes, peeled and sliced into 1 inch rounds
- 3 tablespoons olive oil
- 2 tablespoons melted butter or vegan butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 garlic cloves, crushed
- 1/2 cup vegetable broth
- 1 tablespoon fresh thyme, chopped
Instructions
- Preheat the oven to 425 degrees Fahrenheit.
- Toss sweet potato rounds with olive oil, melted butter, salt, pepper, and crushed garlic.
- Arrange the slices on a baking sheet in a single layer.
- Roast for 20 minutes, then flip each potato piece.
- Pour vegetable broth onto the tray and continue roasting for 15 to 20 minutes until tender.
- Sprinkle with fresh thyme and let rest briefly.
- Serve warm while the centers are still soft and velvety.
Notes
- Do not overcrowd the baking sheet for best caramelization.
- Add maple syrup for extra sweetness.
- Use vegan butter for a dairy free version.
