Ingredients
Scale
- 2 cans (5 ounces each) tuna in olive oil, drained
- 1 small red onion, finely diced
- 1 cup cherry tomatoes, finely chopped
- 1/3 cup Kalamata olives, chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon olive oil
- 1/4 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 4 large slices sourdough bread
- 1 cup shredded mozzarella cheese
Instructions
- Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
- In a mixing bowl, combine drained tuna, red onion, cherry tomatoes, olives, parsley, lemon juice, olive oil, salt, and black pepper. Stir gently until evenly mixed.
- Arrange sourdough slices on the prepared baking sheet and toast lightly in the oven for 3 minutes.
- Spoon the tuna mixture evenly over each slice of bread.
- Sprinkle shredded mozzarella evenly over the tuna mixture.
- Bake for 8 to 10 minutes until cheese is melted and bubbly.
- Broil for 1 to 2 minutes for a golden top, watching carefully to prevent burning.
- Remove from oven, cool slightly, and serve warm.
Notes
- Drain tuna thoroughly to prevent soggy bread.
- Lightly toasting the bread before assembling helps maintain crisp texture.
- Freshly shredded cheese melts more smoothly than pre-shredded varieties.
- The tuna mixture can be prepared up to 1 day in advance and refrigerated.
