Description

Creamy and comforting mashed cauliflower blended with butter, garlic, and a touch of milk for a smooth and fluffy side dish. A lighter twist on classic mash that pairs beautifully with almost any meal.


Ingredients

  • 1 large head cauliflower, about 2 pounds, cut into florets
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1/4 cup milk or cream, warmed
  • 3/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, freshly ground
  • 1 tablespoon fresh chives or parsley, finely chopped (optional)

Instructions

  1. Bring a pot of water to a boil and prepare a steamer basket.
  2. Place the cauliflower florets in the steamer basket and steam for 12 to 15 minutes until very tender.
  3. Drain the cauliflower thoroughly to remove excess moisture.
  4. Transfer the hot cauliflower to a blender or food processor.
  5. Add the unsalted butter, minced garlic, warmed milk or cream, salt, and black pepper.
  6. Blend until completely smooth and creamy, scraping down the sides as needed.
  7. Taste and adjust seasoning if necessary.
  8. Spoon into a serving bowl and garnish with chopped chives or parsley before serving warm.

Notes

  • Drain the cauliflower very well to prevent watery mash.
  • Blend while the cauliflower is still warm for the smoothest texture.
  • Add liquid gradually to control thickness.
