- 1 large head cauliflower, about 2 pounds, cut into florets
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1/4 cup milk or cream, warmed
- 3/4 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, freshly ground
- 1 tablespoon fresh chives or parsley, finely chopped (optional)
Instructions
- Bring a pot of water to a boil and prepare a steamer basket.
- Place the cauliflower florets in the steamer basket and steam for 12 to 15 minutes until very tender.
- Drain the cauliflower thoroughly to remove excess moisture.
- Transfer the hot cauliflower to a blender or food processor.
- Add the unsalted butter, minced garlic, warmed milk or cream, salt, and black pepper.
- Blend until completely smooth and creamy, scraping down the sides as needed.
- Taste and adjust seasoning if necessary.
- Spoon into a serving bowl and garnish with chopped chives or parsley before serving warm.
Notes
- Drain the cauliflower very well to prevent watery mash.
- Blend while the cauliflower is still warm for the smoothest texture.
- Add liquid gradually to control thickness.
